Thanks for the tip, Simcha. Here's a recipe for "Pizza muffins" at the Joy of Kosher that I might try for the next minyan Shabbat potluck, or maybe our Shavuot picnic which tends to be done somewhat potluck style with everyone sharing around: www.joyofkosher.com/recipe/pizza-muffins/
I love cookbooks too. We have a whole shelf of a bookcase just for cookbooks. My husband bought me a couple of new ones this past fall when he visited the famed Moosewood Restaurant in Ithaca when he took my daughter to visit Cornell. Most of the recipes are vegetarian and "The Moosewood Restaurant Celebrates" has recipes for Jewish holidays (as well as holidays of other groups too).
I was recently looking for recipes for pareve flan because my daughter recently tried to make one with OK, but less than ideal results. She used rice milk and boiled it down with sugar to make a kind of pareve condensed sweetened milk, but decided that it was too bland so is going to try again using coconut milk and just allow it to taste like coconut.
Here is a great kosher website that I found while doing a web search which was created by a woman who has her own kosher catering business and happens to be a convert to Judaism: www.leahcookskosher.com/index.php
